INFORMATION ABOUT THE PRODUCT Gelatin is produced from collagen found in bones, skin and cartilage. Gelatin (English: gelatin or gelatine) is the irreversible hydrolyzed form of collagen and is classified as a foodstuff. It is an odorless, tasteless, almost colorless and transparent protein compound. It dissolves in hot water and gels when cooled, forming a sticky structure and binding water. It can be used in many food applications: Cheesecake, Jellies, ice cream, desserts where a creamy structure is desired, etc. are the main application areas. Gel strength is expressed with the measurement expressed as Bloom. It is used in the food industry as a clarifying agent, thickener, gelling agent, foaming agent, emulsifying agent and binder. Other areas of use are in the pharmaceutical industry, in capsule production, in photographic film production, in cosmetics, in plastic mask production, in adhesive production, in golf ball production, in fruit juice production, in dairy products, in pet food production, in bird feed.

There are two types of gelatin:

TYPE A: Acid treated:

TYPE B: Alkaline treated Gelatin can also be produced at home.

As a result of boiling some cartilage and bones, collagen dissolves in water and when this water is cooled depending on the concentration, it forms jelly. The production of industrial gelatin is no different. In addition, there are processes such as filtration, evaporation, drying, grinding, separation. Main areas of use: - Gelatin is used as a clarifying agent in fruit juices. (Especially apple juice and vinegar) - Gelatin is used as a stabilizer in foods. - It is used as a structure regulator in jams and marmalades, fruit yogurts, milk desserts, margarine. - It is used in foods with reduced fat content to give the feeling of a fatty product. - It can be used to add volume to foods without adding calories.

Gelatin is used in the production of the following products:

- Dairy products, - Canned meats, - Meat products,

- Ready-made foods and sauces, - Desserts,

- Marshmallow candies,

- Wine clarifier,

- Beer and fruit juices

DOSAGE and INSTRUCTIONS FOR USE Varies according to application. Generally used as 3-5 kg ​​per ton. (This ratio will vary depending on the bloom value.

There are 3 methods to prepare gelatin solution:

1- Dispersing gelatin in cold water and then melting it with heat.

2- Dissolving in hot water.

3- Dissolving gelatin in the process Pay attention to the following when preparing gelatin solution: Never boil the gelatin solution to prevent hydrolysis caused by heat. Always add gelatin to water (not water to gelatin) to avoid clumping problems. Do not dissolve gelatin in acid or fruit juice to avoid unnecessary hydrolysis.

Warnings:

1- You should do your dosage/weighing process completely. Excessive amount can give a sticky structure and insufficient amount can prevent gel formation.

2- Some fruit juices prevent the formation of physical structure due to the enzyme they contain. These fruit juices can be added to the gelatin solution after heat treatment. Example: Pineapple juice

3- It takes twice as long for gelatin to dissolve in milk cream or milk than in water. This should be taken into account in the process We recommend that you take it.

4- You should not heat the gelatin containing application until it boils. This will ruin the thickening properties of the gelatin.

STORAGE CONDITIONS In a cool and dry environment at room temperature. Away from direct sunlight. After opening, the package should be closed in a way that does not absorb moisture.
