SECTION 2: CHEMICAL COMPOSITION & STRUCTURE

Classification

Mimosa tannins belong to the catechol or condensed tannins class (proanthocyanidins) .

Structural Features

  • Starter Units: Catechin or gallocatechin (angularly bonded)

  • Extender Units: 5-deoxy flavan-3-ols (fisetinidol and predominantly robinetinidol)

  • Oligomer Size: Predominantly dimers and trimers

  • Molecular Mass: Average ~1250 units

Key Chemical Properties

  • Low concentration of salts and acids

  • Rapid rate of penetration through the pelt

  • Good stability to enzyme action (yeast/mould resistance)

  • High solubility; low formation of sludge

  • Good fixation of tannin to collagen

  • Stable against bacterial and fungal attack

  • Condensed tannins tend to oxidise and darken on exposure to air and light
