Disodium 5'-Inosinate (IMP) is a flavor enhancer. It is rarely used alone, it’s often used in combination with monosodium glutamate and sodium guanylate. The umami taste has a synergistic effect when used together.
Description
It occurs as white crystals or white crystalline powder. It contains approximately 7.5 olecules of water of crystallization. It is soluble in water, sparingly soluble in alcohol, and practically insoluble in ether.
Application
It is mainly composed of 5'-guanylate disodium and 5'-inosinic acid sodium, and its properties are also similar to it. It is white to beige crystal or powder, odorless and delicious, and has significant effect in combination with sodium glutamate. The synergy effect is greatly increased. The 5'-disodium uridine disodium and 5'-disodium citrate disodium have a weaker taste.
It can be used as a flavor enhancer (taste agent). This product is often combined with sodium glutamate, the amount of which is about 2% to 10% of monosodium glutamate. It can be combined with other kinds of ingredients, such as a kind of compound umami component is 88% of MSG, 8% of taste nucleotides and 4% of citric acid. The other components were 41% MSG, 2% taste nucleotides, 57% hydrolyzed animal protein, and 1% disodium succinate.
