Tertiary-Butyl Hydroquinone (TBHQ) or E319 as it is called by the European Union is a synthetic antioxidant used in many product formulations in the food industry. TBHQ, an aromatic compound with a phenolic structure, is white, crystalline powder and has a unique light odor. It delays oxidation, especially in liquid oils with high unsaturated fatty acid content, prevents the product from becoming rancid and extends its shelf life. TBHQ, which does not affect the color, smell and aroma of the food to which it is added, can be used in combination with other synthetic antioxidants. Although studies have shown that TBHQ can cause some adverse health effects in high doses, international food safety organizations state that it does not pose a risk in terms of the amounts used in foods. The maximum amount of TBHQ used in food formulations is limited on a product basis.
