Yeast extract is an ingredient used in countless products such as soup, sauces, bouillons, meat products, ready meals and salty snacks.
The basic ingredient of yeast extract is fresh yeast, which we know very well, which is also used in bread, beer and wine making. Yeast extract is obtained by breaking down yeast cells. In this way, enzymes are released and the cell wall is destroyed.
What remains are the natural ingredients that make up the yeast cells, such as proteins, amino acids, carbohydrates, vitamins and minerals.
The reason why yeast extract is used in so many places is of course that it appeals to the palate. Yeast extract, which tastes similar to homemade meat bouillon, has the umami feature, which is also defined as the fifth taste and intensifies the flavor of the food it is added to.
Among the substances that yeast extract contains, which we have listed above, the ones that give it its indispensable taste are proteins and amino acids. However, since its taste is quite intense, it is used in very small amounts. The yeast extract ratio in many products is less than 1%.
WHAT ARE THE BENEFITS?
According to the Food and Agriculture Organization (FAO), the protein quality of yeast extract has reference values similar to those of eggs or milk. This means that yeast extract contains all the essential amino acids required for the nutrition of the human body, with high absorption properties. In addition to proteins, yeast extract is also rich in vitamin B, fibers and minerals.
When compared to soy-style plant-based proteins, it has more advantages in terms of allergenic properties. To be clear, it does not have any known allergic effects.
Although the taste of yeast extract resembles meat bouillon, it does not contain any meat products. For this reason, it stands out as an ideal product for vegans and vegetarians.
It reduces salt consumption as it increases the existing flavor of meals. In this respect, it can also be preferred in low-salt diets.
WHAT GIVES FLAVOR TO YEAST EXTRACT?
What gives yeast extract its umami flavor is the glutamate in it. However, it has no connection with Mono Sodium Glutamate, also known as MSG, which is an additive. Glutamate is a naturally occurring component in many fresh products such as tomatoes, peas, and mushrooms.
Our bodies also produce glutamate regardless of what we eat; for example, glutamate is found in saliva and even breast milk.
The main reason why yeast extract and MSG are confused is the glutamate content. The glutamate content in yeast extract, which is a completely natural product, is around 5%, which is only 1/5 of the glutamate found in parmesan cheese, for example. MSG, on the other hand, consists of 100% glutamate. Unlike yeast extract, MSG does not have a unique taste; it only enhances the existing taste of the product it is added to.
